Cupcake Love

ThRiLLinG ThUrSdAys!!!!

I LOVE thursdays. :) In fact I call Thursday Mini Friday. First of all its so close to the weekend you can TASTE it. Plus its the day I get to have date night with my sexy guy.



We drove up the canyon to our camping spot. We were hoping to find the spots we like so that we can start making reservations but it was too snowy!  Boo!


But it was still Beautiful! We ate dinner in the car and enjoyed each other's company and the scenery.

Later we watched movies on Netflicks and may have had a late night run to Del Taco. 50 cent tacos are a deal you can't beat! :)

 
I can't believe it was just about a year ago I started this crazy adventure with my sweet James. Out Anniversary is next weekend and I can't wait!

indoor smores

Grandma Wilma came to visit this weekend and brought this S'mores maker so we gathered supplies and made us some S'mores! They were yummy and the kidlets had lots of fun!
 
 



 
Our fridge bit the dust so we got a new one. Nothing fancy

 
Want to know my fridge secret? put press and seal on the shelves. Then when things get messy just peel it off and your fridge is like new! Hooray!

Chocolate, a girl's best friend

I am really loving my new job. But I do have to work a lot of hours. I had to work Saturday which was a bummer. But the weather is getting better, it was General Conference this weekend, and things could definitely be worse.
 
And I got a new apron. So after working in the garden I made some chocolate marshmallow cookies. Josh helped me and said "it feels like we are on cupcake wars. We should go on cupcake wars!!" He was so excited I didn't have the heart to tell him I was an amature. Haha



Chocolate Marshmallow Cookies
-15 marshmallows (cut into thirds)
-2/3 Cup cocoa powder
-2 Cups flour
-1 teaspoon baking soda
-1 teaspoon salt
-1 Cup sugar (plus 1/2 Cup sugar for rolling)
-1 Cup crisco
-1/2 Cup brown sugar (firmly packed)
-2 unbeaten eggs
-1 teaspoon vanilla
1. Cut marshmallows into thirds (I use scissors), and place in freezer while preparing the cookie dough.
2. Measure and Sift together with a whisk the: flour, cocoa powder, baking soda and salt.
3. In a separate bowl, cream together the: sugar, brown sugar and crisco.
4. Blend into the sugar bowl the 2 unbeaten eggs and vanilla. Beat together well.
5. Stir in the dry ingredients.
6. Roll the dough around each marshmallow third sealing it in a small ball.(This can get messy, so sometimes I wear those thin plastic throw away gloves.)
7. Roll each ball in sugar.
8. Place on a cookie sheet about 1 1/2 inches apart.
9. Bake at 400 for 4 1/2 to 5 minutes, then set out to cool.

easter weekend!

What a busy and fun weekend! Can I mention how much fun I am having with SATURDAY off.... yay! We went on an egg hunt at Farmington Park, we colored Easter eggs, found baskets hidden by the easter bunny, went to church, had an egg hunt in the yard, and had lunch with James' mom.

When the kids woke up Easter morning we had what we called the bunny trail. The Easter Bunny had left lots of foil wrapped Hershey eggs and he had hidden the baskets so the kids had to find them.



 


My first ever easter basket from someone other than my mom. James got me all my favorite treats! I was so excited.
A funny thing about the kids... they always chant "kiss! Kiss!" then acxt all grossed out when we do, its so funny. But I am all for any excuse to kisss my honey!
